Papaya, crackled black pepper and condensed milk
There’s always a limit to the choice of fruits at the supermarket. But there are those occasion you find something exotic. And when you do they cost a ridiculous penny.
I wanted something that had a melon like texture without being too sweet. The Papaya gave me a stare down and I surrendered without resistance. It’s an amazing fruit when eaten cold and refreshingly juicy.
It was late into the night, hot and I felt tired. I needed something light and tasty. Out came the Papaya and I had some savoury Tellicherry peppercorns stashed away. The contrast in flavour got me excited. The heat from the Tellicherry would instantly take the blah out. The combo seemed like a decent match with the Papaya, but wasn’t going to wake me fully.
After rummaging through the fridge I found a can of condensed milk. It was like finding a cozy pair of socks on a cold night. This Eagle Brand is from Hong Kong. The can has a cool embossed eagle logo on the bottom. I don’t think many people notice it. They’ve been in business since 1866, and whats looks to be taken over by Nestle. In America, there is also an Eagle brand, but not sure if they are related.
I could control the sweetness with a light drizzle of the condensed milk and grind up the exact amount of pepper on top.
