Deep fried banana chips sprinkled with Kampot black pepper and salt

A traditional Cambodian snack. Locally grown bananas are about 3”-4” in size, relatively small compared to typical bananas. Bananas ripen quickly in the 40+ degrees weather in Cambodia, surprisingly they have a light sweetness and dense texture.

The bananas were deep fried and crisped into delicate thin chips then lightly sprinkled with black Kampot pepper and salt. The texture of the thinly cut bananas crackle perfectly, leaving each crunch with a tingle on the tongue from the Kampot pepper, giving it that subtle Cambodian touch. An ever so satisfying treat.
